THAI RED TOFU CURRY

Serves 10

Ingredients

800g

Tofu diced into 2 inch cubes

100g

KNORR BLUE DRAGON Thai Red Curry Paste

50ml

Sunflower oil

300g

Onions, sliced

300g

Red peppers, sliced

300g

Button mushrooms, sliced

500ml

KNORR BLUE DRAGON Create More Thai Red Curry Concentrated Sauce

250ml

Light coconut milk

250ml

Water

10g

Fresh coriander chopped

Advanced Preparation
  • Warm the serving plates. Prepare the ingredients as above.

Method
  1. In a suitable bowl combine the tofu and KNORR BLUE DRAGON Thai Red Curry Paste and mix well. Cover, label and refrigerate until required.
  2. Heat the oil in a suitable pan and add the onions, peppers and mushrooms. Cook for 2 minutes.
  3. Add the tofu and continue to cook for a further 2 minutes until it is lightly golden.
  4. Add the KNORR BLUE DRAGON Create More Thai Red Curry Concentrated Sauce, water and coconut milk and mix well. Bring to a simmer and allow to cook for 10 minutes.
  5. Serve centre of plate, garnished with the chopped coriander.
Service Hint
  • Serve with noodles and prawn crackers.

Handy Hint
  • Tofu can be replaced with mixed vegetables, prawns or other meat substitutes.
